Vendaikai Puli Kulambu Recipe /Spicy and Tangy Ladies Finger(Okra) Tamarind Gravy

Vendaikai or Okra puli kulambu is one of the varieties of different puli kulambu. This kulambu will be present for all South Indian festivals. There may be variations of this kulambu, but this is one of my favourites to relish with fryums or spicy potato fry.

This is one of the simplest recipes, that can be prepared in just 15 - 20 mins. The aroma from this kulambu will spread through your house and would tempt you to try at once. Try this kulambu, I can assure you that you will not be disappointed.

Ingredients:

10 Cloves Garlic
½ Chopped Onion or
6 Shallots
10 Ladies finger
3 or 4 Red Chillies
½ Tsp Mustard seeds
¼ Tsp Asafoetida
¼ Tsp Fenugreek seeds
2 Tbsp Sambar chilli powder(homemade)
½ Tsp Turmeric powder
2 Tbsp Salt
10 - 12 Cashew
2 Cups Tamarind Juice

3 Tbsp Cooking oil

Method:

Prepare all the ingredients:



1.      Soak a lemon sized tamarind in warm water for 15 minutes. Obtain 2 cups of tamarind extract.
2.      Heat oil in a sauce pan. Add  mustard seeds, asafoetida and fenugreek seeds. Let it splutter.


3.      Now add the chillies, chopped garlic and onion. Saute until the onions are translucent. Saute the onions in low heat, to avoid the onions from getting burnt.


4.      Once the onion turns translucent, add the chopped ladies finger and fry for 2 minutes.


5.      After 2 minutes add the tamarind juice, sambar chilli powder, turmeric powder and salt. Mix everything and let it come to a boil.


6.      Grind the cashews to a fine paste.


7.      Add the cashew paste to the boiling gravy and mix well.


8.      Cook the gravy for 5 minutes or until the gravy reaches the desired thickness.

9.      Spicy and tangy vendaikai puli kulambu is ready to served with hot rice, idli, dosai or chapathi.
