Brinjal(EggPlant) with Stuffed Coconut Masala Recipe:

Brinjal is always one of my favourite vegetables and I would love to experiment this vegetable with
different flavours. The recipe is here is from my mother's kitchen. This is one of the delicious and quick dish for a special occasion.

Be generous with oil for this dish, as this enhances the flavour of coconut and the brinjal. This dish is my all time favourite made with brinjal. Increase the quantities of coconut proportionately with brinjals.

Ingredients:

6 Small Brinjals (Egg plant)
½ Cup grated or chopped coconut (fresh or frozen)
3 Tbsp Sambar chilli powder (Homemade)
½ Tsp Turmeric Powder
3 Tsp Salt
3 Tbsp Oil
¼ Cup Water
½ Tsp Mustard seeds

Method:


1.      In a mixer grinder, add the coconut, ½ tsp turmeric powder, chilli powder, salt and little water. Grind the mixture to a fine paste and keep it aside.
2.      Slice the brinjals into four pieces starting from top to bottom, but make sure they stay attached at the bottom. This will ensure that the brinjals stay in one piece and will also enable us to stuff them.
3.      Stuff the brinjals with the coconut mixture.
4.      In a pan, heat oil on medium flame. Add mustard seeds and let it splutter.
5.      Now place the stuffed brinjals in the pan and add the rest of the coconut mixture. Add ¼ cup water and mix it carefully.
6.      Cook the brinjals with the pan covered for 15 to 20 minutes.
7.      Keep checking in-between to avoid the brinjals from getting burnt.
8.      After 20 minutes, brinjals must have been cooked completely. Tasty and spicy stuffed brinjal curry is ready to be served.

9.      Brinjal with stuffed coconut masala can be served with white rice. This also tastes good with chapathi as well.
