Venthaya keerai (Methi leaves) serves as rich source of protein and is good for digestion. This recipe involves basic ingredients such a venthaya keerai (methi leaves) shallots, tomato, cashew or coconut, chilli powder. Make sure you wash the leaves as much as possible to get rid of the mud. This makes great difference.

This dish always holds a special place in my menu. as it is one of my favorites from my mother's kitchen. Who wouldn't love mother's preparation. I'm tired of waiting for the leaves in the market, that I have started growing them at my home. This recipe would demand for some extra oil which makes it more tastier. I have prepared this dish with cashew paste. But the traditional recipe uses coconut. If you don't get shallots, try preparing it with onions. There
will be a taste difference, but it would still be good.  I haven't seen this dish anywhere else except in my mom's kitchen, so I can proudly say this would be a new recipe to be added
to your favourities. This tastes great with hot white rice. This can also be served with chapathi & dosa as well.

Ingredients:

1 Cup Vendhaya keerai / Methi leaves
1/2 Cup Shallots finely chopped
1 Cup Finely chopped tomatoes
1/4 Cup Coconut paste or Cashew paste
3 Tbsp Oil
2 Tsp Sambar Powder
1/2 Tsp Turmeric Powder
2 Tsp Salt or as required
1 Tsp Mustard seeds

Method:

1. Cut the roots of the methi leaves and wash it 3 times to get rid of the mud.


2. In a frying pan on medium flame, add 3 tbsp oil, and mustard seeds. Let it splutter.


3. Then add the chopped shallots and fry until the shallots are translucent.


4. Now add the chopped tomatoes, sambar powder, turmeric powder, salt and mix everything well.


5. Cook this until the oil leaves the sides of the pan.


6. Now add the methi leaves and cook it for 5 - 10 minutes in low flame.



7. Finally add coconut or cashew paste, mix well in low flame and turn off the heat after 5 minutes.


8. Tasty Venthaya keerai kozhambu/Methi leaves curry is ready to be served with hot rice.
