This gravy is a boon for tomato lovers. This is another awesome recipe from my mother's kitchen. My mother prepares the traditional food often. But I would like experiment with her traditional cooking. This dish is prepared with variety of spices fried and ground to paste. One important ingredient is shallots, that makes all the difference. If you can't find shallots, then you can still prepare this with onions. 

This recipe can also be prepared by adding drumstick, which brings in its own wonderful flavour to this recipe. The speciality with this dish is the freshly ground masala. You can reduce the spices as per your taste. This recipe may look complex, but its worth the wait.

Make sure you chop the tomatoes really fine, that helps in easy cooking,  and also you don't get chuncks while eating. This can be served with hot white rice, idli and dosa.

Ingredients:

3 Cups Chopped Tomatoes
3 Shallots finely chopped
2 Red Chillies
1 Tsp Mustard seeds
½ Tsp Turmeric powder
3 Tbsp Oil
10 Curry Leaves
2 Tsp Salt or as required
1 Cup Water

For Masala to grind:

1 Tsp Urad dal
1 Tsp Channa dal
¼ Tsp Peppercorns
½ Tsp Cumin seeds
1 Tsp Sambar Powder(Homemade)
1/8 Tsp Fenugreek Seeds
4 Red Chilli
10 Curry Leaves
1 Tsp Shredded Coconut
1/8 Tsp Asafoetida
1 Tsp Coriander seeds
½ Cup Chopped Shallots

Method:

1.       Heat a frying pan on medium flame. Dry roast peppercorns, cumin seeds, coriander seeds, red chillies, fenugreek seeds, asafoetida, curry leaves, 1 tsp sambar powder, urad dal and channa dal separately. Let them cool and grind them into fine powder.





2.       In the same pan heat oil and fry shallots until it turns light golden brown. Let it cool and grind it into a paste along with 1 tsp of shredded coconut.


3.       Mix the paste with the ground masala powder and keep it aside.


4. Heat a sauce pan, add oil, mustard seeds and let it splutter. Then add 2 red chillies, curry leaves and fry them for a minute.


5. To the curry leaves, add chopped shallots and fry until they turn translucent.


6. Once the onions turn translucent, add the finely chopped tomatoes and salt. Mix them well and fry until the oil leaves the sides of the pan.


7. To the cooked tomatoes add the masala paste,turmeric powder, 1 cup of water and mix well. Let the gravy cook in the medium flame until the gravy reaches the desired thickness.


8. Spicy masala tomato gravy is ready. It can be served with hot rice, idli and dosa.
