One of the simplest yet delicious curry that can be prepared in under 15 minutes. My go to recipe on a lazy day.This comes handy with just onions and tomatoes to be chopped and nothing more. Let goes well with rice, chapathi or dosa. It has to be prepared completely in low flame.

The ingredients that I've discussed here are enough to prepare this recipe for two people. This can be altered proportionately as per your need. You can also prepare this without egg and serve as a side dish for rice. This recipe calls for little extra oil which gives the taste.

Ingredients:

2 Tomatoes finely chopped
1 Onion finely chopped
2 Hard boiled eggs
2 Tbsp Oil
2 Tsp Salt
2 Tsp Sambar Chilli Powder (Homemade)
1/4 Tsp Turmeric Powder
1 Tsp Mustard seeds

Method:

1. Heat oil in a pan on medium flame. Then add mustard seeds and let it splutter.


2. Now add the chopped onion and saute it until it is translucent.


3. Once the onions are translucent, add the chopped tomatoes, salt, turmeric powder, sambar chilli powder and mix well. Let the tomatoes cook until the oil leaves the sides of the pan.



4. When the oil starts to form around the pan, add the half slit boiled eggs and mix carefully. Let it cook for 5 minutes.

5. Spicy tomato egg curry masala is ready.
6. This can be served with hot white rice, chapathi and dosa as well.
