Sweet and Tangy Lemon Jelly Cookies Recipe

Ingredients:

1 Cup Wheat flour
½ Cup Powdered Sugar + 1 Tbsp for dusting
½ Cup Butter melted
2 Eggs or 2/3 Cups unsweetened apple sauce
1 Cup White Sugar
½ Tsp Baking Powder
2 Tbsp Wheat Flour
¼ Cup Lemon Juice

Method:

     1.  Preheat the oven at 180 degrees Celsius.
2   2. In a mixing bowl, add 1 cup wheat flour, ½ cup melted butter and ½ cup powdered sugar.
     3. Blend everything with a fork or spatula into soft cookie dough.
     4. Flatten the dough in a 8 inch square pan and bake in the preheated oven for 10 minutes.
     5. In the same mixing bowl add 2 eggs or 2/3 cups apple sauce and blend with a electric blender for 2 -3 minutes.
     6. To the eggs add 1 cup white sugar and beat until it is pale and fluffy.
     7. Now add 2 tbsp wheat flour and ½ tsp baking powder to the egg mixture and blend well. Make sure there are no lumps in the mixture.
     8.Finally add ¼ cup lemon juice and blend the mixture.
     9.Cookie base has been in the oven for 10 minutes. Take it out and pour the lemon mixture over the cookie dough. Pop it back in the oven and bake for 25-30 minutes or until the jelly is set.
     10. Once the jelly is set take it out and let it cool at room temperature.
     11. Dust the lemon jelly with powdered sugar and cut it into cubes and serve hot or cold.
