Spicy Vegetable Biriyani Recipe

A Classic Indian Vegetable Briyani is a perfect dish for any occasion, usually prepared with basmati rice. But here I've prepared with normal boiled rice.
Vegetable Briyani is an easy option, if you wanted to make use of most vegetables at one time. There are different methods to prepare this briyani. But I prefer making it in the pressure cooker, which is pretty simple. I prepare this briyani, with the homemade chilli powder, that has all the spices which gives the unique taste. 

This briyani is best on a sunday, to eat something nutritious and with minimal work. It can be served with raitha or brinjal curry. Please refer to the brinjal curry here. Make sure you cook the rice as per your requirement. Cooking rice varies with different pressure cooker. Mine gets cooked just right in 2 whistles!

Ingredients:

2 Cups Rice (Washed & Soaked for 30 minutes)
1 Onion thinly sliced
½ Tomato finely chopped
2 Tsp Ginger garlic & green chilli paste
1 Carrot diced
1 Potato diced
½ Cup Green Peas (Soaked overnight)
½ Cup Beans chopped
3 Tsp Sambar chilli powder
1 Tsp Garam Masala
½ Tsp Coriander Powder
½ Tsp Tamarind Powder
2 Tbsp Yoghurt
3 Tbsp Oil
1 Cinnamon Stick
4 Cloves
1 Bay Leaf
3 Tsp Salt or as required

Method:

1.      Heat oil in a pan or pressure cooker on a medium flame. Add cinnamon stick, cloves and bay leaf to the oil.


2.      Add 1 sliced onion and sauté for 2 minutes. Add ginger garlic chilli paste and sauté until the onions becomes translucent.



3.      Add chopped tomato, chilli powder, turmeric powder, garam masala, coriander powder, salt and mix them well until oil oozes out.



4.      Add vegetables, 2 tbsp yoghurt mix well and sauté for 3 minutes.



5.      Now add 2 cups rice and sauté for 3 minutes.


6.      Add 3 ½ cups water. Cover with the cooker lid and cook for 2 or 3 whistles and turn off the heat.

7.      Once the pressure is released, add some coriander leaves and mix well.



8.      Serve hot with onion raitha.
