Spicy brinjal pepper masala is basically a South Indian dish. This is one of recipes that highlights the pepper taste. Since the brinjals are cooked soon, this can be made within 45 minutes. This recipe uses wide range of spices and peanuts. Peanuts are the speciality of this dish. Don't count on calories as you will be using some extra oil.

Spicy brinjal masala goes well with rice and chapathi as well. Alter the spice as per your taste. I have used homemade masala which adds additional taste to the gravy.

Ingredients:

8-10 Brinjals
1 Tbsp Pepper corns
1 Tsp Coriander seeds
2 Tbsp Peanuts
½ Tsp Sesame seeds
1 Inch Ginger
2 Big Garlic pods or 5 Small pods
1 Onion
½ Tomato
1 Inch Tamarind
1 Tbsp Sambar powder
1 Tsp Cumin seeds
10 Curry leaves
¼ Tsp Turmeric powder
3 Tbsp Oil

Method:

       1.       Wash and cut the brinjals as shown in the picture. Place the brinjals in salt water to avoid oxidation.

       2.      Heat a frying pan on medium flame. Dry roast pepper corns, coriander seeds, peanuts and sesame seeds. Let them cool down and then grind them to a fine powder.

       3.       In the same pan, heat 1 tsp oil and then add chopped onion. Fry until the onion turns translucent.
       4.       To the onion, add chopped ginger and garlic. Fry for a minute.

        5.       Then add chopped tomato and tamarind.Fry until the tomato is cooked. Let it cool down and make a paste.

        6.       Mix the paste to the ground powder and keep it aside.

       7.       In the same pan, add the remaining oil and cumin seeds. Let it splutter. Add the curry leaves and fry for a minute.

 8.       To the pan add the chopped brinjals, salt and sambar powder. Mix them well, cover and cook for 5 – 10 minutes in low flame.

      9.       Once the brinjals are cooked, add the ground masala and add enough water to make gravy. Mix the gravy and let it cook for 10 minutes until the raw smell is alleviated.

      10.   Hot and spicy brinjal pepper masala is ready.

      11.   This tastes great with white rice, idli, dosa and chapathi as well.
