This Sambar chilli powder has been in the family for generations. This has always enhanced the taste of our food. Be it vegetarian or non-vegetarian, there is no dish without this chilli powder. This can be stored for 6 
months in an air tight container to preserve its wonderful aroma. 

Every recipe in my blog has been prepared with this chilli powder. This powder has enough spice from the chilli and colour, that you would not require to add plain chilli powder. As per the measurements in this recipe, this could last for 2 months for a family of three. You can also increase the measurements 
proportionately to have more quantity. 

Ingredients:

100 Grams Red Chillies
50 Grams Corinader Seeds
2 Tbsp Channa Dal
2 Tbsp Thoor Dal
2 Tbsp Urad Dal
2 Tsp Peppercorns
2 Tsp Cumin Seeds
¼ Tsp Asafoetida
¼  Fenugreek Seeds
1 Tsp Mustard Seeds
10 Curry Leaves
1 Tsp Salt

Method:

1. Heat a frying pan in a medium flame and dry fry 50 grams of coriander seeds for 3 minutes and keep it aside.


2. In the same pan fry 2 tsp peppercorns and 2 tsp cumin seeds for 3 minutes and keep it aside.


3. In the same pan fry 2 tbsp channa dal, 2 tbsp thoor dal, 2 tbsp urad dal, ¼ asafoetida, ¼ fenugreek seeds and 1 tsp mustard seeds until golden brown.




4. Fry curry leaves separately. Do not add oil.

5. Finally dry fry red chillies.


6. Let them cool at room temperature.


7. Grind everything into fine powder and spread it on a paper and let it cool again.
8. Sambar chilli powder is ready. Store the chilli powder in an air tight container.


9. This can be used as chilli powder in all the food preparations.
