Lady's finger is one of the nutritious green vegetables. Because of its sticky nature, this is not a favourite vegetable for many and for me too. So I just wanted to try this vegetable in different methods to get rid of its sticky nature. And finally I have settled with this recipe. This is not necessarily to be eaten with rice, but this can be substituted as a healthy snack against all junk foods. Crispy nature of this recipe will become favourite among kids and elders as well.

This is one of the simplest and tastiest way of making lady's finger. Can be prepared under 20 minutes and tastes best when served hot. I've prepared this recipe with basic masalas and the same can be replaced with the spices of your own.

Ingredients:

250 Grams Lady's finger or Okra
3 Tbsp Besan Flour
2 Tsp Rice Flour
2 Tsp Sambar Powder (homemade)
1/2 Tsp Garam Masala
1/4 Tsp Coriander Powder
1 Tsp Salt or as required
3 Tbsp Yogurt
1 + 1/2 Cup Cooking oil for deep frying

Method:

1. Wash and dry the lady's fingers or okra before cutting the vegetable.
2. In a dry cutting board, cut the lady's fingers as shown in the image.


3. Fry the lady's finger in a frying pan on slow flame for 10 minutes. Do not add oil while frying.


4. Let it cool down. To the lady's fingers, add 3 tbsp besan flour, 2 tsp rice flour, 2 tsp sambar powder, 1/2 tsp garam masala, 1/4 tsp coriander powder and salt as required. Mix everything well until the lady's fingers are coated with the masala.


5. To the mixture add yogurt only when you are ready to fry them immediately. Keeping the mixture for even 5 minutes after adding the yogurt will make it soggy.


6. If you plan to fry in batches, add the yogurt to the first batch and once the first batch is ready to be taken out of the oil, mix the yogurt to the next batch.
7. Heat oil in a pan on a medium flame. Add the first batch with yogurt and fry for 3 - 4 minutes or until golden brown.


8. Lady's finger fry is a great evening snack.
