Cauliflower is one of the nutritious green vegetable. The popular gobi manchurian or gobi 65 is prepared with this vegetable. I just wanted to share the other easy way of preparing cauliflower fry on any regular day. Though this vegetable may not be a favourite among many, this dish may change that perspective. I made this fry by chopping the florets really fine.

Care has to be taken while cleaning the cauliflower. So it is always better to wash after cutting and then put it in the boiling water with salt and turmeric powder for 5 to 7 minutes. It is important to drain water completely or else the fry won't be dry. Cooking won't take much as we have already boiled the vegetable prior. Cauliflower fry or poriyal as we say it is a wonderful side dish for sambar, rasam and curd. Also this can be had with just the white rice.


Ingredients:

2 Cups chopped cauliflower
1 Cup finely chopped onion
½ Cup finely chopped tomato
1 Inch ginger finely chopped
2 Garlic cloves big finely chopped
1 Green Chilli finely chopped
2 Tbsp Sambar powder
½ Tsp Garam masala
¼ Tsp Coriander powder
¼ Tsp Turmeric powder
2 Tsp Salt
1 Tsp Cumin Seeds
2 Tbsp Oil

Method:
     
      1.       Cut the cauliflower florets and chop them finely.


      2.       Boil 2 cups of water with turmeric powder and salt. Add the chopped cauliflower and let it boil for 10 minutes. Drain the water and keep it aside.



      3.       Place a frying pan on a medium flame, add 2 tbsp oil, 1 tsp cumin seeds and let it splutter.


      4.       Now add chopped onion and sauté for 3 minutes. Add chopped garlic, ginger and green chilli. Fry until the raw smell leaves and onions are translucent.



      5.       To the onion add chopped tomates, sambar powder, turmeric powder, garam masala, coriander powder and salt. Mix everything well and cook until the tomatoes are cooked.



     6.       Now add the boiled cauliflower into the pan, mix everything and cover the pan. Cook the cauliflower for 10 minutes in low flame.


     7.       Nice spicy cauliflower fry is ready to be served with hot rice.
