Egg Dum Briyani Recipe

Egg Briyani, a simple yet exotic briyani rice variety for both eggetarian and non-vegetarians alike. I usually prepare egg briyani using one pot method, where the rice and gravy are cooked together. In this post, I want to share my sister's version of dum briyani, where we prepare the rice and gravy separately. Then arrange the dum with alternate layers of gravy, egg and the rice that really brings forth the wonderful exotic flavour.

Egg Dum Briyani can be served with raitha, brinjal gravy or kurma of your choice. Given below is a clear step by step description of the preparation.

Ingredients:

3 Eggs Boiled
3 Cups Cooked Rice
2 Tbsp Chilli Powder
1 Tsp Garam Masala
1/2 Tsp Coriander Powder
1/4 tsp Turmeric Powder
1 Bay Leaf
4 Cloves
1 Tsp Cumin Seeds
1/2 Cinnamon Stick
1 Big Onion sliced
1/2 Tomato finely chopped
2 Tbsp Curd
1 Green Chilli finely chopped
3 Big garlic cloves finely chopped
1 Inch Ginger finely chopped
3 Tsp Salt
2 Tbsp Oil
2 Cups Water

Method:

1. Place a frying pan on a medium flame, add 2 Tbsp oil and 1 Tsp Cumin Seeds. Let it splutter.


2. Add 1 Bay Leaf, 4 Cloves and 1/2 Cinnamon Stick. Cook all these for a minute.


3. Add finely chopped onion and fry for 2 minutes. Then add chopped green chilli, ginger and garlic.
Saute until the raw smell leaves and until the onions are translucent.




4. Now add the finely chopped tomato, 2 Tbsp Chilli Powder, 1 Tsp Garam Masala, 1/2 Tsp Coriander Powder, 1/4 tsp Turmeric Powder, 3 Tsp Salt. Mix everything and let it cook, until the mixture leaves oil on the sides.


5. Add 2 Tbsp Curd, mix well and cook for 2 minutes.

6 . Add 2 cups of water, mix will and let it boil.


7. Once the gravy starts boiling, add the boiled eggs cut into halves. Do not mix the gravy after adding the eggs. Let it cook until the gravy thickens and turn off the heat.



8. In a pressure cooker, make alternate layers of boiled rice and gravy along with the egg. Cover the cooker and cook on the slow flame for 15 minutes.



9. Once the pressure is settled, remove the eggs and place it separately. Mix the rice with a spatula slowly, so as to mix the rice and gravy evenly. Do not mix with the eggs in, as the eggs will break and mix in the rice.
10. Hot and tasty egg briyani is ready to be served with brinjal curry.
