Brinjal Curry (Side dish for Briyani) Recipe

Brinjal Curry is one of the best side dishes for all varieties of spicy briyanis. This amazing side dish enthralled my taste buds when I first experienced it in a South Indian hotel. The taste left an ineligible good food memory that influenced me to give it a try at home. After several attempts I managed to get the recipe right. Previously, raitha was my favorite side dish for briyani, but now it takes the back seat and brinjal curry is a big hit in my house.
It's not a complex recipe that can be prepared in 30 minutes with basic items at home. This does not require exotic items or masalas. I've always used brinjal to make traditional varieties, but this recipe is worth the try. This goes well with egg and chicken briyani.
Ingredients:
10 Brinjals sliced into cubes
1 Tsp Pepper Powder
1/2 Cup Tamarind Juice
1 Tsp Cumin seeds
15 Peanuts fried
1 Tsp Sesame seeds
2 Tbsp Chilli Powder (Homemade)
1/4 Tsp Turmeric Powder
2 Tsp Salt
2 Tsp Oil
Method:
1. Soak half lemon sized tamarind in warm water for 15 minutes. Extract half cup of tamarind juice.
2. Wash and cut the brinjal into cubes. Place them in a bowl of water and salt, to maintain colour.
3. Dry fry the peanuts and sesame seeds. Grind these two into a coarse powder.
4. Place a frying pan on a medium flame, add 2 Tsp Oil, 1 Tsp Cumin seeds. Let it splutter.
5. Then add 1 Tsp Pepper Powder, chopped brinjal and salt. Mix everything and cover with a lid and cook for 5 to 10 minutes, or until the brinjal is cooked. Do not add water.
6. Once the brinjal is cooked, add 1/2 cup tamarind juice, 2 tbsp chilli powder, 1/4 tsp turmeric powder. Mix everything well and let it boil.
7. Once the gravy starts boiling, add the peanut powder and mix well.
8. Cook until the gravy in thickened and turn off the heat.
