Bindi / Vendaikai Curry Recipe for Chapathi


Ingredients:

10 Lady's finger
1 Big Tomato finely chopped
1 Small Onion finely chopped
2 Garlic cloves finely chopped
1 Green Chilli finely chopped
1 Inch Ginger finely chopped
10 Cashews
1 Tbsp Curd
2 Tsp Chilli Powder
1 Tsp Garam Masala
1/2 Tsp Coriander Powder
1/2 Cinnamon Stick
4 Cloves
1 Bay Leaf
2 Tbsp Oil
1 Tsp Cumin Seeds
2 Tsp Salt

Method:

1. Wash dry and cut the lady's finger into 1 inch pieces.


2. Fry those in a pan on a medium flame for 10 minutes, so that it will be free from sticking.


3. Soak the cashew for 15 minutes and grind it to a fine paste.


4. In a frying pan on a medium flame, add 2 Tbsp oil and cumin seeds. Let it splutter.
5. Then add cinnamon stick, cloves and bay leaf. Let it fry for 2 minutes.


6. Add finely chopped onions, saute for 3 minutes and add the finely chopper ginger, garlic and green chilli.

7. Fry until the raw smell goes and until the onions are translucent.
8. Add the chopped tomatoes, 2 tsp chilli powder, 1 tsp garam masala, 1/2 tsp coriander powder, 2 Tsp Salt and 1/4 tsp turmeric powder. Fry until the tomatoes are cooked and oils leaves on the sides.



9. Add the cashew paste, lady's finger, mix well and cook it for 5 minutes.



10. After 5 minutes add the curd, mix well, let it cook for 2 minutes and turn off the heat.


11 Serve the hot masala with chapathi or naan.
