Simple Tomato Rice Recipe

Ingredients

1. 2 Cups Rice
2. 4 Cups Boiling water
3. 1 Onion sliced
4. 3 Tomatoes chopped
5. 1/4 Tsp Turmeric Powder
6. 6 Red Chillies
7. 1/2 Tsp Mustard seeds
8. 1 Tbsp Cooking Oil
9. 1 Bay Leaf
10. 3 Cloves
11. 6 Curry Leaves

For the Masala to Grind
1/2 Tsp Fennel seeds
3 Cardamom
1/2 Cinnamon Stick

Method.
1. Dry grind the ingredients for the masala. No need to fry.
2. Add oil in a pressure cooker, add mustard seeds, bay leaf and cloves, let it splutter.
3. Add the onions, red chillies, curry leaves  and saute for 2 minutes.
4. Add in the tomatoes, salt, turmeric powder and the masala.
5. Saute until the tomatoes are mushy.
6. Now add in the rice and fry for 3 minutes.
7. Pour the water and cover with the lid.
8. Cook for 2 whistles.
9. Once the pressure is settled, serve hot with onion raitha and pappad.
