Rasam is a tangy and spicy soup, without which a South Indian meal is not complete. It is atleast to me one of the tastiest and fullfilling part of any South Indian meal. It aids in proper digestion of the food you have. I have prepared different types of rasam such as tamarind rasam, lemon rasam, tomato rasam, parupu rasam and poricha rasam.

The speciality of Poricha rasam is that, there is no need to cook the rasam. It can be made in under 5 minutes and one of the tastiest as well. This one can come in handy on one of those lazier days.

Ingredients:

1 Cup Warm water
1 Small lemon size tamarind
2 Red chillies
1 Tbsp Cumin seeds
1 Tbsp Oil
1 Tsp salt

Method:

1. Soak the tamarind in the warm water with salt for 15 minutes. Extract one cup of tamarind juice and keep it aside.

2. In a kadai, add oil, cumin seeds and red chillies. Saute until the chillies turn dark brown and turn off the gas.

5. Add this tempering to the tamarind juice and mix well.

6. Fresh and tasty poricha rasam is ready. Serve it with hot white rice.
