Quick Carrot Rice Recipe

Carrot rice is the recipe from my mother with a slight variation. This is one of the easiest rice variety for the lunch box. Since I use grated carrots, this dish can be prepared in under 15 minutes, which
the kids would love to have. This recipe is masala free, really simple to prepare.

Ingredients:

1 Cup Cooked Rice
4 Medium sized Carrots grated
1 Small sized Onion finely chopped
1 Green Chilli
2 Garlic Pods
1 Inch Ginger
1 Tsp Salt
1/4 Tsp Turmeric Powder
1 Tbsp Oil
1 Tsp Mustard seeds

Method:

1. Wash, dry and peel the carrot skin. Grate the carrots.
2. Chop the garlic, ginger and green chilli.
3. Place a frying pan on a medium flame. Add the oil and mustard seeds and let it splutter.


4. Now add the chopped onion and saute for a minute.


5. After 1 minute, add the chopped garlic, ginger and green chilli. (If you want the fry to be spicy, make the paste of all three).


6. Fry until the raw smell goes.
7. Then add the grated carrots, salt and turmeric powder. Mix everything, cover with a lid and let it cook for 8 minutes.


8. Spicy carrot fry is ready to be mixed with cooked rice.

9. In a bowl, add a teaspoon of heated sesame oil, add rice and mix well. To this rice add the carrot fry and mix everything with a spoon.


Note : Do not mix with the spatula, as the rice might become mushy.
