Paneer Butter Masala Recipe

Though Paneer Butter Masala is said to have its roots in the Western part of India, it is quite popular among people throughout the nation. I've prepared this with homemade paneer or cottage cheese which gives a more natural flavour to the gravy. A clear step by step procedure with the pictures for easy preparation of this dish is given below.

Ingredients:

1 Medium onion finely chopped
1 Large tomato finely chopped
2 Garlic cloves chopped
1 Inch ginger chopped
1 Green chilli chopped
2 Tbsp Butter
15 Cashews
1 Tsp Oil
Salt as required
1 Tbsp Sugar
1 Tbsp Chilli powder
1 Tsp Garam masala
¼ Tsp Turmeric Powder
1 Cinnamon stick
1 Bay leaf
1 Tsp Cumin seeds
1 Cup cubed homemade paneer

Method:

1. In a medium size pan, add oil and onion. Saute onion until it turns translucent.



2. Add the chopped tomato, chopped ginger, garlic, green chilli, chilli powder, garam masala, salt and     turmeric powder.




3. Cook until the tomato is cooked and oil leaves the sides.


4. Soak the cashew for 15 minutes or boil for 5 minutes and grind it to a fine paste.


5. Once the tomato is cooked, turn off the heat and let it cool at room temperature.


6. Make a fine paste of tomato mixture.


7. In the same pan, add butter, cumin seeds, cinnamon stick and bay leaf. Let it splutter.


8. Pour in the tomato paste, add a teaspoon of chilli powder, if more spice is required.


9. Add the cashew paste and mix well.



10. Once it starts boiling add the paneer cubes and let it cook for 5 minutes.


11. Let it boil after adding the paneer. Add a tablespoon of sugar.


12. Add a teaspoon of fresh cream if preferable.

13. After 5 minutes turn off the heat and serve hot with chapathi or naan.
