Mor Kulambu / மோர் குழும்பு Recipe

Mor Kuzhambu is basically a curry prepared with buttermilk as the main ingredient, with or without vegetables. This famous South Indian dish is one of my favourites. I prefer it without any vegetables to experience the domination of little spicy buttermilk.

It goes well with white rice, appalam or papad, potato fry and vazhaikai fry. This is a must have summer dish.

Ingredients:

1 Cup Fresh Buttermilk
1/2 Tsp Turmeric Powder
1 Tsp Salt

To Grind:

1 Green Chilli
1/2 Inch ginger chopped
1 Tsp Cumin seeds
1/4 tsp Pepper corns
1 Tbsp Raw rice
1 Tbsp Thoor dhal

To Temper:

1 tbsp Oil
1 Tsp Mustard seeds
2 Red Chillies
1/4 Tsp Asafoetida
8 Curry leaves

Method:
1. Soak raw rice and thoor dhal for 3 hours.

2. Make fresh buttermilk, mix in salt and turmeric powder and keep aside. Buttermilk should be             watery.

3. In a mixer grinder, add the soaked rice, thoor dhal, pepper, cumin, green chilli and ginger.
    Grind this to a fine paste.


4. In a frying pan, add the items to temper, let the mustard splutter, and add asafoetida, red chilli
    and curry leaves.

5. Pour the buttermilk in the pan, along with the paste. Keep stirring for the first 1 minute or else
    the paste will form a layer at the bottom.

6. Cook the kolambu for 5-10 minutes. Once the kolambu starts to boil, turn off the heat.

7.  Fresh and aromatic mor kolambu is ready to serve with hot white rice.
